Liu An Gua Pian is a famous spring green tea grown in Liu An (or Luan) County, Anhui Province. This tea belongs to rare and elite teas; it is one of the ten famous teas in China and bears the status of Imperial tea.
Gua Pian is translated as “Pumpkin Seeds”, although its appearance resembles pumpkin seeds very distantly: tea leaves are twisted along the leaf, and such a longitudinal twist gives them a very neat appearance, so they look like a scattering of identical, even, elongated “seeds” " Buds and twigs in this tea are absent.
For the production of Liu An Gua Pian, they take the second leaf, manually twist the back with the fluffy side out and, unlike traditional green teas, they do not fry, but they dry them or bake them over a wood fire in a bamboo basket, constantly stirring the leaves.
