Dried flowers of Clitoria ternate (Clitoria ternatea), a genus of plants from the legume family (Fabaceae). This name was given to this family by the great Swedish scientist Karl Linney in the 18th century. The common name for the butterfly pea plant is Moth Pea. The Thai name for the Anchan plant. In many countries of Asia, they are grown as an ornamental and medicinal plant. The root extract is taken to stimulate the blood circulation of the brain and improve memory, treat insomnia, chronic fatigue, as an antidepressant and to relieve stress. In Thailand, they believe that the flowers of this plant increase immunity, improve eyesight, heal the skin and nourish the hair, preventing the appearance of gray hair. Clitoria flowers are also used as a natural dye for coloring food and tissues.

 

Brewed like tea, dried flowers of Anchan give an infusion of beautiful bright blue with a light grassy-vegetable aroma and a mild flavor with notes of boiled corn and fresh green peas. It is best to use glassware or white porcelain for brewing. The proportion of tea leaves to water: 8-15 flowers per 100 ml. Drink strait with a gradual increase in exposure. With a single brew, 3-5 colors per 200 ml are enough. It goes well with lemon, lime, honey, rose, lavender, Crimean iron ore, thyme, mint and other herbs.
